- Soak the kidneys in cold water in the refrigerator for at least 4 hours, changing the water every hour.
- Add the beef with bone and pork to the slow cooker bowl, then pour in 2.5 liters of water.
- Cover and cook on high setting for 2 hours.
- While the meat cooks, grate the carrot.
- Cut the onion into cubes.
- Cut the pickled cucumbers into chunks.
- Heat 50 ml of vegetable oil in a frying pan over medium-high heat.
- Add the grated carrot and onion cubes, fry for about 5 minutes until golden brown.
- Add the pickled cucumber chunks and fry for 2 minutes.
- Stir in 2 tablespoons of tomato paste and cook for 5 minutes, stirring occasionally.
- Slice the kidneys and fry them in a separate frying pan over medium-high heat for about 5 minutes until cooked through (no pink inside).
- Chop the sausage and ham into bite-sized pieces.
- After 2 hours, remove the meat from the slow cooker, cut into small pieces, and return to the slow cooker.
- Add the fried vegetables, fried kidneys, ham, and sausage. Cover and cook on high setting for 30 minutes.
- Add the olives, cover and cook for 10 more minutes.
- Stir in salt to taste, peppercorns to taste, and 2 bay leaves. Cook for 3 more minutes.
- Serve the meat hodgepodge hot in bowls with lemon slices and sour cream on the side.
