Meatballs in white Sauce Instructions

  1. Beat 1-2 eggs and add to 600g minced pork and beef. Peel and finely dice 1 onion (you can optionally fry it in a separate pan over medium heat for about 5 minutes until golden). Add the onion, 100g breadcrumbs, a pinch of salt, a pinch of pepper, and a pinch of spices to the meat. Mix thoroughly until uniform and smooth. Refrigerate until ready to cook the meatballs.
  2. Heat 1-2 tablespoons olive oil in a frying pan over medium-high heat. Form the meat mixture into small balls. Fry the meatballs, turning occasionally, until browned on all sides and cooked through (about 10-12 minutes, internal temperature should reach 63°C/145°F for pork). Transfer to a plate.
  3. In a separate pan, melt 100g butter over medium heat. Add 2 tablespoons flour and a pinch of salt. Stir and cook for about 2 minutes until golden. Slowly pour 100ml cream while stirring constantly. Stir in 2-3 tablespoons sour cream. If desired, add 50ml dry white wine. Simmer over medium-low heat, stirring occasionally.
  4. Add the browned meatballs to the sauce. Simmer over low heat for 3-4 minutes. Add a pinch of fresh herbs. Serve hot.
