Process all ingredients, except bacon, breadcrumbs and butter, into a meat dough and shape into an elongated dumpling on a work surface sprinkled with breadcrumbs.
Put in a greased ovenproof dish and cover with the bacon strips and flakes of butter. Leave in the oven at 190-210 degrees for about 50 to 60 minutes.
Tip: I always put a few cubes of butter next to the meatloaf so that there is some fat for the side dishes.
