Instructions

  1. Heat a pan over medium heat. Add oil and let it heat for 1 minute. Cut the leek into fine slices and fry for 2-3 minutes until softened.
  2. While the leek cooks, halve the zucchini lengthways and cut into slices. Cut the salami into fine strips. Quarter and core the cocktail tomatoes.
  3. Add the zucchini, salami, and tomatoes to the pan with the leek. Add the finely chopped rosemary and garlic. Season with salt and pepper, mix well, cover with a lid, and cook for 5 minutes over medium heat.
  4. Push the vegetable and salami mixture to the side, creating a small space in the middle of the pan. Crack the egg into the space and cook uncovered until the egg white is set, about 2-3 minutes.
  5. Transfer to a plate and serve.
