Cut the leek into fine slices and fry briefly in a pan with a little oil.
Halve the zucchini lengthways and cut into slices. Cut the salami into fine strips. Quarter and core the cocktail tomatoes.
Put everything together in the pan, add the rosemary and garlic and mix everything well. Season with salt and pepper and cook covered for approx. 5 minutes.
Then push the vegetable and salami mixture aside a little in the middle of the pan, beat the egg in and let it set.
