Place the vegetables, mushrooms and potatoes in an ovenproof pan. Sprinkle the chopped herbs, if possible fresh, and the chopped garlic on top. Salt and pepper and pour a good portion of olive oil over everything. Mix and bake in the oven at 200 degrees for about 30 minutes, turning once or twice. When the potatoes are done, they can be served.
The vegetables taste good on their own, but also go well with grilled meat.
