Mix the marinade with maple syrup, jalapeño sauce, chopped onions, salt and pepper.
Wash off the pork loin. Then cut a pocket into the loin with a sharp knife and fill it with the feta and the finely chopped fresh herbs. Close with a toothpick and marinate with the marinade for about 8 hours.
Before grilling, wrap the loin with the bacon and fix it again with toothpicks.
Now grill the loin over direct heat for a few minutes until it is brown on all sides. Then remove from direct heat and let simmer for about 1 hour over indirect heat (grill with lid).
Gentle grilling over indirect heat makes the loin nice and tender.
