Pluck the lettuce into small pieces, wash and spin. Cook the pasta for 5 minutes and drain. Halve the zucchini and cut into crescents, the leek into thin slices. Pat the tofu dry and dice. Mix the sauce ingredients in the mixer.
Fry the tofu all over and drain on kitchen paper. Fry the zucchini and leek and season with a little salt.
Stir in the pasta, cashew nuts, tofu and sauce and fry everything together for another minute. Mix with the salad in a bowl and serve immediately.
