Instructions
- Place each schnitzel between two sheets of plastic wrap and beat lightly with a meat mallet
- Season the schnitzel with salt, pepper, and paprika powder on both sides
- Set up three shallow dishes: one with flour, one with beaten egg, one with breadcrumbs mixed with grated parmesan
- Coat each schnitzel in flour, shaking off excess
- Dip each schnitzel in the beaten egg, letting excess drip back into the bowl
- Coat each schnitzel thoroughly in the breadcrumb and cheese mixture
- Heat the fat in a large pan over medium-high heat until shimmering (about 2 min)
- Fry the schnitzel 3-4 min per side until golden brown and the internal temperature reaches 63°C (145°F)
