Warm 125 ml milk in the microwave for 1-2 min on medium power.
Mix 250 g flour, 0.5 pack dry yeast, 40 g sugar, 2 packs vanilla sugar, and 1 pinch salt in a large bowl.
Separate 1 egg, reserving the yolk. Add the egg white, the whole egg, and the warmed milk to the flour mixture. Knead for 5-8 min until a smooth dough forms.
Let the dough rise in a warm, draft-protected place for 30 min.
Preheat the oven to 200°C (392°F).
Dust the work surface with flour and turn out the dough. Dust the dough and your hands with flour so it doesn't stick.
Mix in raisins, cranberries, or chocolate chips as desired.
Shape the dough into buns, plaits, knots, or your desired shape and place on a baking sheet lined with baking paper.
Mix the reserved egg yolk with 1 tablespoon milk and brush the mixture over the rolls.
Bake at 180°C (356°F) on the middle rack for 20-25 min until golden.
Test for doneness by inserting a chopstick into a roll; it should come out clean.
Serve warm with jam. This recipe makes 8 rolls (2 rolls per serving).
