Clean and roughly grate the carrots. Mix in a bowl with eggs, flour, spices and parsley.
Heat some oil in a pan. With a tablespoon of the carrot dough, place small heaps in the hot oil and flatten them a little. Slowly fry the pancakes one after the other on both sides until golden brown and crispy.
A herbal quark or similar dip and jacket potatoes tastes very delicious.
