Hard boil eggs, quench and let cool for a few minutes. Halve, take out the egg yolks and place in a bowl, e.g. with a small spoon. Mix the cream, mayonnaise and mustard with the egg yolk to make a paste that is as smooth as possible, season with salt and pepper.
Arrange the egg white halves on the lettuce leaves and fill with the egg yolk paste, this is best done with a piping nozzle / bag. Sprinkle with paprika powder.
