Clean the beans and cut into pieces approx. 2 cm long. Peel and dice the potatoes and apple.
Cook the beans and apple in the salted beef broth with plenty of savory, after 10 minutes add the potatoes.
In the meantime, cut the sausage into slices, finely dice the onion and fry both with the strips of bacon in a pan. Process minced beef with egg and soaked bread roll into a dough, season with salt and pepper, roll dumplings and cook the last 10 minutes of cooking in the soup on a low heat. Let the sausage, bacon and onion soak in the ready-made soup for 5 minutes. Season to taste with salt, pepper, possibly 1/2 teaspoon of sugar and 1 to 2 teaspoons of vinegar. Finally, add the finely chopped parsley to the no longer boiling bean soup.
