Instructions

  1. Wash the mint and remove the stems.
  2. Dissolve sugar in hot water. Bring to the boil until the solution is clear, add the lime juice and pour onto the mint leaves.
  3. Chill in the sugar solution for 48 hours.
  4. Filter the syrup through a fine sieve, fill into sterile bottles, close tightly and store in a cool place.
  5. For a longer shelf life, boil the syrup for 3 minutes before filling.
  6. Use: 1 part syrup + 6 parts water or as a mojito 1 part rum, 1 part soda, 2 parts syrup and ice.
  7. Store in the refrigerator after opening and consume quickly.
