Put all ingredients except the carrots in a bowl and stir well.
Peel the carrots, cut off the ends and roughly chop the carrots, then chop the grain of rice in a multi-chopper. You can of course grate the carrots finely, but we`ve found that they just taste better when chopped.
Put the carrots in the bowl with the dressing and stir the salad well. If necessary, season again with sea salt.
We eat this salad with fried chicken and fried fish or simply as a snack in between.
