Instructions

  1. Finely chop half of one banana, the onion, the peanuts, and the garlic clove.
  2. In a bowl, combine the chopped ingredients with the flour, soy sauce, mustard, and sesame paste.
  3. Crumble the smoked tofu into small pieces, add to the bowl, and season with salt and pepper.
  4. Knead the mixture for 2-3 minutes until it becomes a cohesive mass.
  5. Divide into 4 equal portions and form into burger patties.
  6. Dust both sides of each patty lightly with flour.
  7. Heat oil in a large pan over medium-high heat.
  8. Once hot, carefully place the patties in the pan (they are fragile when first cooked).
  9. Fry for 3-4 minutes on each side until golden and crispy.
  10. Transfer the cooked patties to a plate.
  11. In a separate pan over medium heat, add a pinch of sugar and heat until caramelized, about 3-4 minutes.
  12. While the sugar caramelizes, slice the remaining banana into thin slices.
  13. Once the sugar is caramelized, add the banana slices to the pan.
  14. Cook the bananas for 1-2 minutes, then remove from heat.
  15. Toast the burger buns in a toaster or 180°C (350°F) oven for 2-3 minutes until lightly golden.
  16. Spread peanut butter on the bottom half of each toasted bun.
  17. Layer iceberg lettuce, sliced tomato, and sliced cucumber on top.
  18. Place a cooked patty on the vegetables.
  19. Add additional peanut butter if desired.
  20. Top with the caramelized bananas.
  21. Place the top bun on each burger and serve immediately.
