Steam the monk`s beard in olive oil over medium heat for about 5 minutes, it can still be firm to the bite. Add balsamic vinegar and lemon juice and stir.
Ladle onto a plate and rub fresh parmesan over it. Season with salt and pepper to taste, I won`t do it.
Chanterelles go very well with it. You can also serve it as a vegetable without cheese, then cook it a little softer.
