Beat the egg yolks with the vanilla sugar until the mixture becomes lighter, which takes about 15-20 minutes. In the meantime, melt the chocolate in a double boiler. Firmly whip the egg white with a pinch of salt. Whip the cream until stiff.
Then slide the melted (not too hot) chocolate onto the sugar and egg yolk mixture and stir with a whisk. Then fold in the egg whites. Finally fold in the cream.
Chill for approx. 2-3 hours.
A fruit salad made from strawberries, flavored with orange sugar, goes very well with it.
