- Mix eggs, water, flour and spices into a dough and leave to soak for 15 minutes.
- Heat the oil, bake small crepes and place them on a greased baking sheet.
- Cut the mozzarella into small cubes and spread on top of the crepes. Place the tomato slices on top of the crepes and sprinkle with chopped basil.
- Place the baking sheet in the preheated oven and bake the crêpes until golden brown at 220 degrees for 10-15 minutes.
- Sprinkle with salt and pepper and serve immediately.
