Scrape out the vanilla pod. In a large saucepan, heat the sugar, honey, sesame oil, cinnamon and the pulp of the vanilla pod together with the vanilla pod over a low temperature until the sugar has melted. Remove the vanilla pod. Mix in the oat flakes, sesame seeds and sunflower seeds evenly and well. This may take a little longer, but stir again and again, strip the sugar off the wooden spoon and fold in again until everything is well mixed. Spread the mixture on a baking sheet lined with baking paper, put it in the oven and bake at 175 ° C for about 7 minutes, depending on the type of stove. Scatter the chopped and sliced almonds on top and bake for another 7 minutes, until the mixture is slightly brown and smells pleasant.
Let cool down on the baking sheet and put in a tin.
Mix with yoghurt and dried or fresh fruits if necessary.
