Instructions

  1. Clean and cut the onion, mushrooms and tomatoes. Whisk the eggs with salt and pepper.
  2. Heat the oil in a non-stick pan, fry the mushrooms over a high heat for 3 minutes. Add onion and tomatoes and fry for 2 minutes over medium heat. Pour the egg into the pan and sprinkle with the cheese.
  3. Let set over medium heat and serve.
