Clean and wash the mushrooms and cut into thin slices. Also cut the sheep`s cheese into thin slices and mix with the mushrooms. Incidentally, if you put the sheep`s cheese in the freezer for 40 minutes, it is easier to cut afterwards.
For the dressing, stir salt, pepper and lemon juice and mix with the olive oil.
Finally add the finely chopped parsley.
Stir the sauce into the salad 30 minutes before serving.
