Instructions

  1. Makes approx. 600 ml
  2. Peel the figs and chop them into small cubes - place in a high saucepan.
  3. Mix the Gelfix with about the same amount of sugar and stir into the figs.
  4. Finely chop the chilli and add to the figs. Season the mixture with the lemon juice, mustard powder, mustard seeds, Dijon mustard and plenty of white pepper.
  5. Bring everything to the boil, stirring constantly, then add the remaining sugar. Bring to the boil again and let it simmer for at least 3 minutes.
  6. Put the mustard hot in prepared jars and close immediately. Turn the glasses over and let them cool down on the lid.
  7. The mustard tastes particularly good with cheese.
