Instructions

  1. Peel and dice the beetroot. Peel and finely dice the shallots and garlic. Sweat the beetroot, garlic and shallots in the butter.
  2. Add the cream, vegetable stock and orange juice. Cook for 20 minutes. Then puree and season with salt and pepper.
