Puree the peeled and pitted nectarines with the hand blender, I like it when there is still something firm to the bite.
Put everything in a saucepan, stir in the sugar and bring to the boil while stirring. Then simmer for about 8 minutes. I always do a gel test on a small flat plate.
Remove from heat, stir in the pistachios and lemon juice.
Then quickly fill into glasses, put the lid on and upside down until it is cold.
I filled 10 small glasses, there is also something to give away.
