Halve the fruit, remove the stone. Peel the grapefruit and cut into 4 slices.
Preheat the oven to 200 degrees.
Grease 4 molds, place the grapefruit slice on the bottom, layer the nectarine with the opening facing up, put in the amaretti. Mix the sweet wine with 2 tablespoons of honey and pour over the amaretti. Cook in the oven for 10-15 minutes.
Mix the remaining honey, cinnamon and creme fraiche together. Take the nectarines out of the oven and distribute the cream in dabs all around.
