Chop the parsley. Clean the chicory and cut it very small. Cut the cheese into tiny cubes. Peel and chop the garlic.
Heat the fat in a pan and fry the prawns in it. Add the garlic, parsley and chicory. Season with pepper and sauté briefly.
Put the shrimp mixture in a bowl, stir in the cheese and stuff the squid with it. Close with a roulade needle or a toothpick and season with pepper.
Heat a little more fat in the pan and fry the stuffed squids on all sides. Cook on a low heat for approx. 15 minutes. The consistency should by no means be rubbery, but rather tender. Since the quality and thickness are different, I simply check with a needle in between.
By the way, I usually don`t use any salt here. The squids and the filling actually have enough flavor. Just try the filling before further preparation and then decide whether you want to add salt.
A simple tomato salad with pecorino and garlic ciabatta goes well with this.
