Instructions

  1. Sift the flour, sugar and vanilla sugar onto a work surface. Chop up the butter and add it together with the egg yolks. Knead all ingredients quickly to form a smooth dough and cover and leave to stand in the cold for about 1/2 hour.
  2. Roll out the dough on a floured work surface about 3 mm thick, cut out slices as desired with a round cutter (approx. 3-4 cm diameter) and place on a baking sheet lined with baking paper - dipping the cutter in flour again and again.
  3. For the mass of snow, beat the egg whites into firm snow. Gradually add the sugar and whip the egg whites again until stiff. Use a teaspoon to add a little of this mixture to the shortcrust pastry slices.
  4. Bake in the preheated oven on the middle rack at 175 ° C for about 15 minutes.
  5. Remove the biscuits from the tray, let them cool down completely and put two pieces together with warmed up jam (alternatively, melted couverture is also possible).
