Fry the minced meat with the onions in 2 tablespoons of olive oil; take out of the pan. Fry the zucchini cubes with 2 tablespoons of olive oil.
In the meantime, cook the pasta according to the package instructions minus 1 minute.
Add the minced meat, onions, the tomatoes and approx. 100 ml pasta water or beef stock to the vegetables. Bring to the boil and simmer for about 5 minutes. Stir in the herb cream cheese, bring to the boil and slowly simmer again.
Grease the baking dish with 2 tablespoons of olive oil and alternately fill in a layer of pasta and a layer of sauce. Cover with the cheese and bake in the oven to taste. For this I recommend top heat or grill, since everything is already cooked through.
The casserole is suitable for (small) children, very variable and easy to prepare.
Variants:
Use other types of vegetables (spinach, eggplant, carrots, broccoli, Swiss chard, etc.) or other meats (sliced turkey, minced lamb, etc.).
