Instructions

  1. Halve the Brussels sprouts and cook them in salted boiling water, then lift them out of the water.
  2. Peel the onion and chop finely. Wash and dice the apple. Braise both in hot oil. First stir in the cream, then the mustard and cook everything until done.
  3. Peel the potatoes and cut into very thin slices. Cook in the Brussels sprouts until soft, then drain the water.
  4. Wash the salmon, pat dry, season with salt and pepper. Fry the salmon in hot oil for a few minutes on both sides.
  5. Meanwhile melt the butter. Spread the Brussels sprouts on plates. Place the salmon fillets on top, cover with potato slices and drizzle with melted butter.
