- 500 g Brussels sprouts
- 1 large onion (s)
- 1 apple
- 3 teaspoons mustard, French, coarse-grained
- 100 g cream
- 3 potato (s)
- 4 salmon fillet (s) à 125 g
- 70 g butter

- Halve the Brussels sprouts and cook them in salted boiling water, then lift them out of the water.
- Peel the onion and chop finely. Wash and dice the apple. Braise both in hot oil. First stir in the cream, then the mustard and cook everything until done.
- Peel the potatoes and cut into very thin slices. Cook in the Brussels sprouts until soft, then drain the water.
- Wash the salmon, pat dry, season with salt and pepper. Fry the salmon in hot oil for a few minutes on both sides.
- Meanwhile melt the butter. Spread the Brussels sprouts on plates. Place the salmon fillets on top, cover with potato slices and drizzle with melted butter.
