Wash and peel the potatoes, cut into thin slices. Cut the chilli pepper into fine rings. Put the potatoes and chilli in a bowl. Peel and mash the garlic. Fold into the potato and chilli mixture together with the parsley, sunflower, walnut and pumpkin seeds. Season to taste with herb salt and pepper.
Put the olive oil in an ovenproof dish and pour in all the ingredients. Put the nut potatoes in the preheated oven. Bake at 180 degrees (gas: setting 2 to 3) for about 35 to 40 minutes until crispy.
