Instructions

  1. Mix the margarine and sugar in a bowl with a hand mixer until creamy. Add the vanilla sugar and the apricot jam and stir again briefly.
  2. Mix the flour, salt and baking powder together and then gradually mix into the margarine-sugar mixture. Fold in the oatmeal and raisins well with a spoon. The result will be sticky and relatively firm.
  3. Form small portions (approx. 1 tablespoon) on a baking sheet and flatten them a little with a fork. Leave a little space between the biscuits, they will rise a little.
  4. Bake in a preheated oven at 150 ° C (convection) for about 15 minutes. Sometimes they are still very soft. Don`t be fooled. Take out and let cool on the baking sheet for 5 minutes, they will become even harder.
