- 150 g mararine, vean
- 225 g suar, brown
- 1 bag vanilla sugar
- 150 grams flour
- 0.75 bag ¾ (s) baking powder
- 200 g oatmeal
- 200 g raisins
- 1 pinch (s) salt
- 3 tablespoon apricot jam, vegan

- Mix the margarine and sugar in a bowl with a hand mixer until creamy. Add the vanilla sugar and the apricot jam and stir again briefly.
- Mix the flour, salt and baking powder together and then gradually mix into the margarine-sugar mixture. Fold in the oatmeal and raisins well with a spoon. The result will be sticky and relatively firm.
- Form small portions (approx. 1 tablespoon) on a baking sheet and flatten them a little with a fork. Leave a little space between the biscuits, they will rise a little.
- Bake in a preheated oven at 150 ° C (convection) for about 15 minutes. Sometimes they are still very soft. Don`t be fooled. Take out and let cool on the baking sheet for 5 minutes, they will become even harder.
- Super tasty, simple, and randomly vegan. Not only tasty at Christmas time!
