Wash the octopus, pat dry and place in an already warmed saucepan. The octopus will let a lot of water and leave it on the stove until this liquid has evaporated again. Now take the octopus out of the pot and cut into bite-sized pieces. It`s much easier with scissors than with a knife.
Now heat the oil in the pot. Sweat the onion until translucent, then add the octopus to the pot. Stir in the hot oil until everything gets a nice color. Deglaze with wine and as soon as the alcohol has evaporated, add the tomatoes, capers, pepper and bay leaf. DO NOT add salt!
Let the octopus simmer gently until the sauce is nice and creamy. Serve with macaroni.
