Instructions

  1. Preheat the oven to 200 degrees. Clean the okra pods, remove the stems.
  2. Mix 5 tablespoons of olive oil, salt and pepper, pour over the okra and place them next to each other on a baking sheet lined with baking paper. Bake in the oven for about 20 minutes, until they are just cooked.
  3. In the meantime, prepare the sauce. To do this, heat the remaining olive oil. Add garlic, ginger and chilli flakes and fry for approx. 1 minute, then add the tomato paste and roast briefly. Add the tomatoes, salt, sugar and pepper and simmer without the lid for approx. 10 minutes until the sauce has thickened a little. If the tomatoes are too dry, add water and allow to simmer.
  4. Spread the tomato sauce on plates and arrange the okra pods on top, sprinkle with chopped coriander leaves and serve.
  5. A bit of baguette goes very well with it, and a steak “if necessary” also works.
