Wash and clean the leek and cut into thin rings. Clean the mushrooms, cut the large ones in half.
Heat 1 tablespoon of oil in a pan and fry the mince. Add the leek and mushrooms, cook for 3-4 minutes. Mix in the crème fraîche. Add the cream cheese and let it melt. Season to taste with salt and pepper.
Whisk eggs, milk, salt and pepper together well. Heat 1 tablespoon of oil in a small pan and bake 3 omelets from it. Divide between 3 plates and pour the mince mixture on top. Fold the omelets together and sprinkle with parsley.
