Clean and finely dice the mushrooms. Roughly chop the sheep cheese, onion and parsley.
Sweat the onion in a little oil until translucent, then add the mushrooms and fry. Add the thyme and fry briefly.
Beat the eggs, season with salt, pepper and parsley and add the sheep`s cheese. Spread the mixture over the mushrooms. Fry until the egg is completely set. Turn again briefly and finish frying on the other side.
