Instructions

  1. Separate the eggs, beat the egg whites in a bowl with salt and the mineral water until stiff. Carefully stir in the egg yolks, parsley and half of the cheese.
  2. Melt a little butter in a pan and add the mixture. Scatter the rest of the cheese and parmesan over the mixture and let everything set well over a low fire.
  3. If possible, turn the omelette and let it steep for another minute.
