Instructions

  1. Peel the onion, cut it into cubes and then flour it. Add the caraway seeds and mix. Now fry the whole thing in hot oil until golden and dab it on the kitchen paper so that it soaks up the fat.
  2. Then sift the flour (600 g) with the baking powder, into a bowl. Mix the left bacon, the lightly fried spring onions, the chives, the parsley and some of the stripped thyme. Then add the olive oil, the eggs and the buttermilk, which are seasoned with salt, pepper and nutmeg. Finally fold in the fried onions.
  3. Line the muffin tins with paper liners and pour in the mixture. The oven should be preheated and now the muffins are pushed in and baked at 175 ° C for about 25-30 minutes. 10 minutes before the end of baking, a slice of blue cheese is placed on each individual muffin and is baked with it.
