Dice the tomatoes and feta cheese. Chop the spring onions, garlic and chilli pepper into small pieces. Mix everything in a bowl with plenty of olive oil, thyme, salt and pepper.
Then place a fish fillet on a piece of baking paper, drizzle with lemon juice, season with salt and pepper. Spread the entire mixture over the two fish fillets. If you want, you can also put a piece of fish on top.
Fold the whole thing up into parcels and close tightly, staple if necessary. Place everything for 30 - 40 minutes at 200 ° C in the preheated oven on the grill rack, underneath the baking sheet if anything leaks. But good baking paper can withstand this.
