Ingredients

  • 2 fish fillet (s) (e.g. redfish or cod fillets)
  • 8 small tomato (s) (more likely 12 for cherry tomatoes)
  • 1 bunch spring onion (s)
  • 200 g feta cheese (with fat, preferably sheep cheese)
  • 1 chilli pepper (s), fresh
  • 2 cloves garlic
  • 2 tablespoon thyme
  • lots olive oil
  • a little lemon juice
  • some salt and pepper
  • 1 baguette (s)

Instructions

  1. Dice the tomatoes and feta cheese. Chop the spring onions, garlic and chilli pepper into small pieces. Mix everything in a bowl with plenty of olive oil, thyme, salt and pepper.
  2. Then place a fish fillet on a piece of baking paper, drizzle with lemon juice, season with salt and pepper. Spread the entire mixture over the two fish fillets. If you want, you can also put a piece of fish on top.
  3. Fold the whole thing up into parcels and close tightly, staple if necessary. Place everything for 30 - 40 minutes at 200 ° C in the preheated oven on the grill rack, underneath the baking sheet if anything leaks. But good baking paper can withstand this.
  4. Best served in a parchment paper boat with baguette.
