Fry the gnocchi in a hot pan in olive oil. Dice the onion, add to the hot gnocchi and sweat until translucent.
Wash the vegetables and cut into small cubes. Halve the cocktail tomatoes and add all the vegetables to the gnocchi in the pan and cook on a medium heat. The vegetables are cooked after approx. 15 minutes.
Chop the parsley and add to the pan. Finally, season with salt, pepper and honey.
