Cut the baguette open, brush with butter and spread 1 clove of garlic on top. Roast in the oven according to the instructions on the packet.
In the meantime, dice the peppers, slice the zucchini and leek. Chop the thyme with 1 clove of garlic.
Fry the diced paprika in a large pan for approx. 3 minutes, add the zucchini and fry for 2 minutes, then add the leek, thyme and garlic and fry for another 2 minutes. Season with salt, pepper, lemon zest and juice and sprinkle with cheese cubes.
Serve with the garlic bread.
