Mix 4 eggs with milk, salt and flour to form a smooth dough. Let the dough soak for about 30 minutes.
Wash the raisins and pat dry. Mix the quark, raisins, sugar, lemon juice and 1 egg together.
Heat the oil in portions in a coated pan. Bake 6 pancakes one after the other from the batter.
Halve the pancakes and brush with 1 tablespoon of quark each, roll up and place in a greased baking dish. Bake in a hot oven (electric stove: 175 degrees, convection: 150 degrees, gas: level 2) for about 20 minutes.
