Peel and finely dice the onion and fry in olive oil. Add the minced meat and fry until it has a nice brown color. Already now lightly pepper and salt. Then add the tomatoes and corn and let everything simmer on the lowest level.
Meanwhile, make a pancake batter from flour, eggs, milk and salt and bake several thin pancakes. Keep them warm.
Finally, season the boiled down corn mince with salt, pepper, Italian herbs and cayenne pepper. If you like it spicy, you can also add some chili powder. A shot of red wine and 0.5 tablespoon tomato paste can`t hurt either.
Serve the pancakes with the sauce. Goes well with green salad with tomatoes.
