Cook the pasta until al dente according to the instructions on the packet.
Peel the onions and cut into small cubes. Heat the clarified butter in a coated saucepan and fry the onion cubes dusted with a little sugar. Mix with the paprika powder and salt. Add the drained pasta.
Mix the sour cream with a dash of milk or whipped cream and pour over the pasta. Mix everything together, season to taste, garnish with the chopped parsley and serve immediately.
This paprika, sour cream and onion sauce can also be served with dough dumplings, potatoes or egg spaetzle.
