It`s sooo easy and so delicious. I eat it a lot. This dish is derived from stuffed peppers and was created by my mother!
Cut the bell pepper into small pieces.
Brown the rice in a pan with a tablespoon of oil until golden.
Fry the beef and onion with a tablespoon of oil. Salt and pepper.
Mix the rice and mince. Add 2 thirds of the vegetable stock. Simmer gently for approx. 5 minutes with the lid closed. Place the peppers on top. Don`t stir! Cook for about 5 minutes with the lid closed and at a low temperature.
In the meantime, put the tomato paste in the preheated pan, add the ketchup, the rest of the broth and cayenne pepper and bring to the boil.
Pour the sauce over the peppers. Don`t stir! Let simmer gently for about 10 minutes.
Then mix everything together and serve with fresh bread.
Modifications with thyme or the addition of e.g. corn or other ideas of your own are of course possible and desirable.
