First the sauce: mix creme fraiche, ketchup, salt, pepper and paprika in a bowl.
Spread the sauce on each slice of Parma ham (approx. 1-2 teaspoons). Place the rocket (washed) in bunches on the edge of the slice of Parma ham. Roll up the Parma ham with arugula and sauce.
I always let the rocket hang out above the roll so that the whole thing looks good.
Maybe decorate with coarsely grated parmesan. Delicious as a small starter snack.
