Instructions

  1. Press the sausage mixture out of the skin and mix with the ground fennel seeds.
  2. Of course, an Italian fennel salsiccia is also possible, but it is not available everywhere.
  3. Put on a saucepan with water for the pasta.
  4. Finely chop the garlic and a large red chilli pepper with seeds. Clean the mushrooms, cut them into slices and fry them in oil in a deep pan. When the mushrooms are a deep golden brown color, remove them and set aside.
  5. Heat a large sip of olive oil in the same pan. Add the garlic, chilli and sausage mixture and fry over medium heat. Use a spatula to cut the sausage up a bit so that it doesn`t get too big. When the sausage has turned color, deglaze with white wine and let it boil down briefly.
  6. Either cut the cherry tomatoes in half or simply squeeze them out over the pan with your hands. Let simmer for about 5 minutes until the tomatoes have dissolved slightly. Add the cream and bring to the boil again. At this moment, a scoop can also add pasta water to the sauce. Lower the temperature a little, add the mushrooms and let them steep in the sauce. Season with salt and pepper and stir in the freshly chopped parsley.
  7. Immediately place on a plate over the pasta, cooked al dente according to the instructions on the packet, and serve drizzled over with grated Parmesan and a little olive oil.
  8. A glass of dry white wine goes best with this.
